Spicy Lemon and Garlic Green Beans

This is one of the easiest and most delicious sides to add to whatever you’re whipping up this week. If you feel like you're in a rut with your dinner sides, this is the recipe for you! It’s just way too easy and tasty not to share. The garlicky-lemon profile keeps it simple enough to pair with most any cuisine. Plus, the recipe is simple enough to make so it won't take your attention away from cooking your main dish.



I’ve started making this so often I don't even need to consult the recipe anymore. I love when recipes become second nature like that. It's so freeing to cook without having to consult a webpage every two minutes to make sure you know what to do next, or that you haven't ruined your dinner. If you guys are down to commit this recipe to memory like I have, I promise you won't regret it! Did I already mention that these green beans are super easy and yummy? Well, saying it again can’t hurt.


The other thing I love about this recipe is that you can easily swap or add your favorite flavors since it's very simply seasoned. But, not so simply that I would call this side boring by any means. In fact, Chloe – everyone's favorite feline food critic – thought this was a solid 10/10 for a side dish. Which is very nice for her! However, Nolan gave it an 8.5. That averages out to 9.25. I guess I’ll take it!


Onto the recipe!


 

Spicy Lemon and Garlic Green Beans


Servings: 4

Prep Time: 10 minutes

Cook Time 10 minutes

Total Time: 20 minutes


Ingredients

  • 1 lb of green beans, ends trimmed

  • 1 Tbsp olive oil

  • 1 tsp red pepper flakes (less if you don't like spicy!)

  • Salt and pepper

  • 3 garlic cloves, minced

  • Juice of ½ a lemon


Directions

  1. Add the green beans to a large skillet with 1 cup of water. Cook them on medium heat until the water begins to boil. Once boiling, stir the green beans and allow them to boil for 3 minutes and they become a vibrant green color.

  2. Then, drain the green beans into a colander and return the empty pan to the stove on medium heat.

  3. Add the olive oil to the pan. Once hot, return the green beans to the pan and add the chili flakes. Toss them in the oil and allow the green beans to start browning.

  4. Once the green beans begin to brown, add the garlic and some salt and pepper to taste. Cook for 2-3 minutes longer, or until the garlic becomes fragrant and turns golden.

  5. Then, add the lemon juice to the pan. Toss to coat the green beans, and remove from the heat.

  6. Serve warm and enjoy!
