Salisbury Steak

So I've never heard of Salisbury steak before. My dad suggested it to me the other week and I came to find out that Salisbury steaks are just really big meatballs. This recipe reminds me a lot of meatloaf, but instead of a loaf, they’re individual patties with a lot of gravy—AKA another delicious comfort food recipe to add to my repertoire. Which reminds me, these are delicious due in large part to their being covered in gravy.

So I have to confess that I didn’t cook this one all on my own. This is a recipe my dad whipped up and I followed him around the kitchen asking, “What did you put in now? How much was that?” Which isn’t his favorite. He doesn’t like recipes, he cooks with his intuition. But anyway, this is the recipe I was able to coax out of him.


Chloe had the audacity to call this glorified diner food. While she’s not wrong... I did not appreciate that comparison. She did eventually agree, after much deliberation and a few licks, that it was pretty good (for diner food). We’ll go ahead and give this recipe an 8/10!

Wine Pairing Suggestions


This would be so good with Malbec, Petite Sirah or an earthy Cabernet Sauvignon. All of these wines are heavier bodied and have good tannin structure which would make them an excellent pairing to Salisbury Steaks that have a lot of strong flavors themselves.

 

Salisbury Steak

Yield: 4 steaks

Prep Time: 30 minutes

Cook Time: 40 minutes

Total Time: 1 hour, 10 minutes


Patty Ingredients

  • 1 lb ground beef

  • Salt and pepper to taste

  • 1 Tbsp garlic powder

  • 1 Tbsp onion powder

  • ⅓ cup finely chopped parsley

  • ½ cup bread crumbs

  • 2 eggs

  • ¼ cup parmesan cheese


Gravy Ingredients

  • ½ bell pepper

  • 2 small carrots

  • ½ onion

  • ¼ lb mushrooms

  • 2 Tbsp butter

  • 2 tsp garlic powder

  • Salt and pepper to taste

  • 1 tsp fresh thyme

  • ⅓ cup all purpose flour

  • 1 cup red wine

  • 3 cups beef stock


Directions

  1. Prepare the patties by combining all the ingredients in a large bowl. Separate the mixture into 4 equal portions and flatten them into oblong patties. Set them aside.

  2. Prepare the vegetables by dicing the bell pepper, carrots, onions and mushrooms.

  3. Heat a large pot on the stove to medium heat. Melt the butter in the pan.

  4. Add the vegetables to the pot and let them sweat for 10 minutes.

  5. Add the garlic powder, thyme, salt and pepper. Cook for another minute.

  6. Add the flour to the pot and cook it for another minute.

  7. Add the red wine to the pot and let it cook until the liquid is well combined. This will take around 2 minutes.

  8. Add the beef stock and whisk until the lumps are gone. Reduce the heat to low and stir occasionally.

  9. While the gravy simmers, start heating a large cast iron skillet to medium heat. Melt a tablespoon of butter into the pan and sear the prepared patties one each side for about 5 minutes, or until the steaks are a nice dark brown. Cover the pan so the inside has a chance to cook.

  10. When plating your Salisbury steaks, add as much gravy as your heart desires.
