Today I'm sharing another childhood favorite! Meatloaf! Just like my mom used to make. This recipe is great for those of us who are guilt-ridden when they have to throw out those bread ends everyone refuses to eat. Ever since I could remember, my mom would throw the baggie with the bread ends in the freezer, and when she collected enough of them, she’d make this meatloaf. It’s an old family recipe from my mom’s grandma that she learned by helping her in the kitchen. This blog post is our family’s first attempt at putting a formal recipe together since no one has ever written it down.

When I asked my mom to send me the recipe for recreation, she just listed ingredients, no quantities. I had to think wayyyyyy back to those early days I’d help my mom in the kitchen. Luckily, my first attempt was perfect. I used to love helping my mom make this when I was a kid because I got to use my hands to combine everything at the end! It was so fun to squish everything around and get it pressed into the pan.
Along with some other kitchen staples, this meal comes together pretty effortlessly. It’s also easily modified for dietary preferences, or, whatever you need to use up in your fridge. If you're looking for more veggies, chop those up finely and toss them into the mixing bowl. You can also add your favorite spices if you like it hot because this recipe easily adapts to whatever you want.

I've been asking my boyfriend to rate all of my meals lately (along with Chloe) and I think Chloe is more honest with me. Everything I make earns an 8.5 from Nolan, including this meatloaf. Seems suspicious if you ask me. So I turned to Chloe, who said that it was very good. She gave it a solid 9. I'll let you decide who to believe.
Meatloaf

Yield: 9-12 servings
Prep Time: 30 minutes
Cook Time: 1 hour
Total Time: 1 hour, 30 minutes
Ingredients
6-8 slices of bread, cubed very small
1 lb ground beef
1 white or yellow onion, finely diced
6 cloves garlic, minced
2 tsp garlic powder
1 tsp onion powder
1 tsp ground sage
2 tsp ground oregano
1 Tbsp salt
2 tsp pepper
1 cup milk
2 eggs
1 Tbsp worcestershire sauce
⅓ cup yellow mustard
⅔ cup ketchup, or more for topping
Directions
Preheat your oven to 350 degrees F. Grease a large 9x13 baking dish and set that aside.
Add all of the ingredients, except for the ketchup, to an extra large mixing bowl. Combine the ingredients using your hands until well incorporated.
Put the mixture into the baking dish and press the mix down, until it's evenly distributed and flat.
Top the meatloaf with the ketchup, adding more if you want the ketchup layer thicker. Spread evenly over the meatloaf.
Cover with foil and bake for 40 minutes. Uncover the meatloaf and bake for another 20 minutes.
Allow the meatloaf to cool for 10 minutes before serving.
