Golden Onion Pasta

Oh my WORD! I have never had something as good as this pasta before in my LIFE! It takes some TLC to prepare, but it’s definitely worth it. (Honestly, you must make this pasta. It will change your life.) I’m serious! My family cannot get enough of it.

Golden Onion Pasta is basically Alfredo sauce with caramelized onions. It is so much better than regular, boring white sauce pasta though. There is a depth of flavor developed in the onions while they caramelize, elevating a dish that would have otherwise been another night of regular-old alfredo sauce. Do yourself a favor and just make this already! I’m done talking about it now—you just need to try it.

(BTW: I grew those onions in my garden. I'm very proud of them, and they made delicious pasta. That is all.)

Wine Pairing Suggestions


I suggest pairing this dish with an off-dry white wine. Because of the sweetness coming from the caramelized onions, something like Riesling or chenin blanc would be a nice compliment to the mellow, creamy—and, arguably sweet—dish. If you must drink red wine, I suggest something lighter with soft tannins, like Pinot Noir.

 

Golden Onion Pasta

Prep Time: 10 minutes

Cook Time: 50 minutes

Total Time: 1 hour

Yield: 6 servings


Ingredients

  • 1 lb spaghetti

  • 1 cup butter

  • 2 lbs walla walla onions (or another sweet varietal)

  • 1 Tbsp salt

  • 2 Tbsp sugar

  • 2 cups heavy whipping cream

  • 1 Tbsp fresh ground black pepper

  • ½ cup grated Parmesan cheese

  • Chives or fresh parsley, for garnish


Instructions

  1. Begin melting butter in a large, heavy bottomed sauté pan on medium heat.

  2. Prep the onions by slicing them into long and thin strips. The thinner you cut them, the quicker they will caramelize.

  3. Add the onions, salt and sugar to the pan and let the onions sweat in the butter for about 10 minutes. After that, reduce the heat to a medium, medium low, and cook them for another 30-40 minutes. Cook the onions until they are brown in color but not burnt, stirring occasionally. (Keeping the heat on low is key to caramelizing the onions so that they don't burn.)

  4. While you wait for the onions, begin heating a large pot of salted water. Bring it to a boil and cook your spaghetti noodles to al dente. Drain the Pasta and set it aside.

  5. Once the onions have developed a nice golden brown color, add the heavy cream to the pan.

  6. Once the cream has heated through, add in the Parmesan and black pepper.

  7. Lastly, combine the pasta with the sauce and sprinkle on the chives or parsley for garnish.
